Christmas Chocolate Cake

Ingredients

  • 250 g dark chocolate (70% cocoa content)
  • 150 g butter
  • 5 eggs
  • 150 g unsweetened applesauce
  • 140 g raw cane sugar
  • 80 g whole wheat flour
  • 70 g type 405 wheat flour
  • 2 tsp Baking powder
  • 2 tbsp powdered sugar from raw cane sugar

Instructions

    Chop the chocolate and melt it over a hot, non-boiling water bath; remove from heat and fold in cold butter pieces.

    Separate the eggs. Beat egg whites until stiff peaks form. Whisk yolks with applesauce and sugar until light and creamy. Gently fold into the cooled chocolate-butter mixture. Fold in the beaten whites. Sift the flours and baking powder over the batter and fold gently to combine.
