Chocolate Birthday Cake

Ingredients

  • 300 g dark chocolate couverture (70% cocoa)
  • 225 g butter
  • 4 eggs
  • 100 g raw cane sugar
  • 180 g whole wheat flour
  • 100 g Ground Almonds
  • 2 tbsp cocoa powder
  • 2 tsp Baking powder
  • 2 Tbsp whipping cream
  • 150 g fresh berries (e.g., currants, strawberries)
  • 4 tbsp powdered sugar made from raw cane sugar
  • 1 tbsp Lemon Juice

Instructions

    Coarsely chop 170 g of couverture with a knife. Melt butter with the chocolate over a hot water bath and then let it cool slightly.

    Beat eggs with sugar in a bowl until pale and creamy. Add the chocolate butter and mix. Combine flour with nuts, cocoa, and baking powder and fold into the chocolate mixture.

    If necessary, grease a springform pan. Pour the batter into the pan, smooth the top, and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 40 minutes. Remove from the oven and let cool.

    Meanwhile, chop the remaining chocolate and melt it with cream. Drizzle over the cake and garnish with berries as desired. Mix powdered sugar with a little lemon juice to make a thick glaze and spread in streaks on top.
