Ingredients

  • 500 g dark chocolate couverture
  • 5 eggs
  • 180 g margarine
  • 100 g sugar
  • 50 g ground almond kernels
  • 250 g flour
  • 0.5 sachet baking powder
  • 1 pinch salt
  • fat (for the pan)
  • 200 ml brandy
  • 225 g apricot jam
  • 100 g marzipan raw mass
  • 25 g powdered sugar

Instructions

    Preheat the oven to 180°C with upper and lower heat. Finely chop or grate 250 g of couverture chocolate. Separate the eggs. Whisk the margarine, sugar, and yolks until fluffy. Gradually fold in the chocolate, almonds, and flour mixed with baking powder. Beat the egg whites with a pinch of salt to stiff peaks and fold into the batter using a whisk. Pour the dough into a greased springform pan and bake in the preheated oven for 60-70 minutes. Remove the cake from the pan, let it cool, and cut it crosswise once.

    Moisten both halves evenly with brandy. Warm the apricot jam and spread it on the lower half. Reassemble the cake. Melt the remaining couverture in a water bath and coat the cake with it. Knead the marzipan with powdered sugar and roll it thin between plastic wrap. Cut out Christmas motifs and decorate the cake with them. Serve chilled, sliced into pieces.
