Ingredients

  • 100 g California almonds (peeled)
  • 4 tbsp Honey
  • 4 tsp almond liqueur
  • 500 ml milk
  • 3 tbsp cornstarch
  • 5 tbsp chopped peeled almonds
  • 5 tbsp chopped hazelnuts
  • 5 tbsp pine nuts
  • 5 tbsp raisins (soaked in port wine)
  • 2.5 tbsp mixed cinnamon
  • 2.5 tbsp mixed sugar

Instructions

    Coarsely chop or grate the almonds, then blend with honey, almond liqueur and 100 ml milk in a blender; stir in the cornstarch.

    Heat the remaining milk. Add the almond mixture, whisk until it boils, and season with a touch of honey.

    Sauté the almonds, hazelnuts, and pine nuts gently in a large pan without added fat. Drain the raisins. Pour the almond cream into a wide bowl and spread it out. Sprinkle with powdered sugar to prevent skin formation. Just before serving, scatter the toasted nuts and raisins on top and dust generously with cinnamon-sugar mixture.
