Ingredients
- 400 g salmon fillet (ready to cook, skinless)
- 2 untreated lemons
- 2 untreated limes
- 1 tbsp green peppercorns (glass jar)
- 1 Avocado
- 2 tbsp chopped chives
- 4 tbsp olive oil
- 1 tsp Honey
- Salt
- Pepper

Rinse the salmon, pat dry and slice into thin rounds. Arrange decoratively on plates. Wash lemons and limes hot, halve them. Squeeze one lemon half and one lime half over the salmon, then cut the remaining halves into thin slices and distribute over the fish. Sprinkle with green peppercorns. Peel, halve, pit and dice the avocado. Scatter chopped chives over the salmon.

Whisk the citrus juice with olive oil and honey, season with salt and pepper. Drizzle over the salmon carpaccio and serve.
