Chocolate Soufflé

Ingredients

  • 6 soufflé cups (or ramekins)
  • powdered sugar
  • 120 g dark chocolate
  • 50 g butter
  • 50 g flour
  • 300 ml milk
  • 50 g sugar
  • 3 egg yolks
  • 4 egg whites
  • powdered sugar (for the cups)
  • butter (for the cups)

Instructions

    Grate the chocolate finely. Melt the butter in a pot, stir in the flour and cook until lightly browned. Deglaze with the milk, stirring constantly until it boils. Stir in the chocolate and 2/3 of the sugar, then remove from heat. Beat the egg yolks and fold them into the chocolate mixture. Whip the egg whites very stiffly, folding in the remaining sugar. Fold 3 tablespoons of the meringue into the chocolate batter, then gently fold in the rest. Spoon the batter into the buttered and sugared cups and bake at 175 °C for 30 minutes.
