Ingredients
- 50 g butter
- 40 g flour
- 250 ml milk
- 0.5 tsp Salt
- Nutmeg (freshly grated)
- Pepper (freshly ground)
- 4 eggs
- 100 g sharp mountain cheese (grated)
- 4 soufflé molds
Instructions

Melt the butter and stir in the flour until fully combined. Gradually pour in the milk while stirring, bringing to a boil. Let the mixture simmer briefly under constant stirring; it should become very thick.

Season with salt, pepper, and grated nutmeg, then remove from heat and let cool slightly. Separate the eggs. Fold the yolks into the cooled batter.

Beat the egg whites until stiff peaks form, then fold in the grated cheese. Spoon the mixture into buttered soufflé molds sprinkled with a little cheese. Bake in a preheated oven at 160 °C (fan) for 20 minutes on the lower rack. Serve warm in the mold.
