Ingredients
- 120 g dark chocolate
- 50 g butter
- 50 g flour
- 300 ml milk
- 50 g sugar
- 3 egg yolks
- 4 egg whites
- powdered sugar (for the molds)
- butter (for the molds)
- 6 soufflé molds
- powdered sugar

Grate the chocolate finely. Melt the butter in a pot, stir in the flour and cook until lightly browned. Deglaze with milk, stirring constantly until it boils. Stir in the chocolate and 2/3 of the sugar, then remove from heat. Whisk the egg yolks and fold into the chocolate mixture. Beat the egg whites very stiffly, folding in the remaining sugar. Fold 3 tbsp of the meringue into the chocolate mixture, then gently fold in the rest. Fill the buttered and sugared molds with the batter and bake at 175°C for 30 minutes.
