Ingredients
- 6 soufflé cups
- powdered sugar
- 120 g dark chocolate
- 50 g butter
- 50 g flour
- 300 ml milk
- 50 g sugar
- 3 egg yolks
- 4 egg whites
- powdered sugar (for the cups)
- butter (for the cups)
Instructions

Grate the chocolate finely. Melt butter in a saucepan, stir in flour and cook until lightly browned. Deglaze with milk, stirring constantly until it boils. Add chocolate and 2/3 of the sugar, whisk to combine, then remove from heat. Beat egg yolks and fold into the chocolate mixture. Whisk egg whites very stiffly, folding in the remaining sugar. Gently fold 3 tablespoons of the beaten whites into the chocolate batter, then fold in the rest carefully. Fill the buttered and sugared cups with the batter and bake at 175°C for 30 minutes.
