Ingredients

  • 175 g dark chocolate (65%)
  • 75 ml milk (3.5%)
  • 2 tsp cocoa powder
  • 80 g sugar
  • 5 eggs
  • 2 tbsp flour
  • butter (for the pan)

Instructions

    Preheat oven to 180°C and place a deep baking tray half-filled with water on the lower rack.

    Brush an oven-safe dish with butter and dust it with sugar. Set aside.

    Chop the chocolate.

    Heat milk with cocoa powder and half of the sugar until boiling, remove from heat, and melt the chopped chocolate into it.

    Separate the eggs. Whisk yolks and flour into the chocolate mixture. Beat egg whites with remaining sugar to stiff peaks and fold in gently.

    Pour the batter into the prepared dish and bake in the water bath for about 50 minutes. The center should remain soft or runny. Dust immediately with powdered sugar before serving.
