Chocolate Soufflé

Ingredients
- soft butter (for the cups)
- sugar (for the cups)
- 75 ml milk
- 1 tsp cocoa powder
- 1 piece unprocessed orange zest
- 4 tbsp sugar
- 100 g dark chocolate (or couverture)
- 2 Eggs
- 1 egg yolk
- a pinch of salt
- 1 tbsp flour
- powdered sugar (for dusting)
Instructions

Preheat the oven to 180°C (356°F) with upper and lower heat. Grease the cups (about 200 ml capacity each) with butter and evenly sprinkle with sugar.

Bring the milk, cocoa powder, orange zest, and 2 Tbsp sugar to a boil in a small saucepan while chopping the chocolate.

Remove from heat, discard the orange zest, add the chocolate and let it melt.

Separate the eggs. Beat the egg whites with salt until stiff peaks form, gradually adding the remaining sugar. Stir all yolks and flour into the melted chocolate. Fold in the beaten egg whites and pour the mixture into the prepared cups.

Place the filled cups in a large oven-safe dish (e.g., gratin pan or deep tray). Carefully pour about 2–3 cm of hot water around them and bake on the lower rack for approximately 20 minutes.

Remove from the oven and serve immediately.
