Mango Lime Cream

- 1 large mango (ripe, preferably Thai mango)
- 2 tbsp corn starch
- 200 ml water
- 150 g yogurt
- 80 g powdered sugar
- 3 limes
- 200 g heavy cream

Wash the limes and finely grate the zest. Squeeze out the juice, measuring 100 ml. Whisk the corn starch with a little cold water; add the remaining water, lime juice, and powdered sugar to a saucepan and bring to a boil. Stir in the starch mixture, let it boil once more, then set aside and cool while stirring occasionally.

Meanwhile peel the mango and cut it into thin slices around the pit. Cut some slices into strips for garnish; dice the rest into small cubes.

Distribute the mango cubes among 12 small bowls.

Stir the yogurt into the cooled cream. Whip the heavy cream until stiff peaks form, then fold it in.

Taste the cream and spoon it over the mango cubes. Garnish with mango strips and lime zest, then refrigerate for at least 3 hours.
