Chocolate Raspberry Slices
Chocolate slices with raspberries: This sweet slice contains relatively little fat and provides many fibers thanks to the raspberries.
Ingredients
- 4 eggs
- Salt
- 100 g cane sugar (plus 2 Tbsp sugar for the glaze)
- 75 g flour
- 25 g cocoa powder
- 75 ml orange juice (freshly squeezed if desired)
- 2 Tbsp orange liqueur (or 2 Tbsp orange juice)
- 400 g raspberries
- 5 Tbsp raspberry jelly
- 250 ml red grape juice
- 1 packet of red gelatin glaze

Separate the eggs. Whip the egg whites and a pinch of salt with a hand mixer until stiff peaks form.

Beat the yolks with 100 g sugar and 2 Tbsp hot water until very creamy.

Sift together flour and cocoa, then fold alternating portions of the beaten egg whites and dry mixture into the yolk batter.

Line a baking tray (30 × 40 cm) with parchment paper. Spread the dough onto the paper. Bake in a preheated oven at 200 °C (180 °C fan, gas: level 3) on the second rack from below for 12 minutes. Let the dough cool on a wire rack.

Remove the parchment. Mix orange juice with liqueur and drizzle over the cake. Cut the cake lengthwise into three strips. Rinse the raspberries, drain them in a sieve and pat dry.

Heat the jelly and brush the surface of the cake strips with it.

Stack the strips. Place the raspberries on top.

Prepare red grape juice, remaining sugar, and gelatin glaze according to package instructions and drizzle over the raspberries. Chill for 2 hours. Then cut the cake into pieces.
