Chocolate Pralines

Ingredients

  • 150 g dark chocolate (min 65% cocoa)
  • 100 g dark nougat
  • 100 ml whipping cream
  • 400 g dark couverture

Instructions

    Chop the chocolate, cut the nougat into pieces, and mix both in a bowl.

    Bring the cream to a boil, pour it over the chocolate-nougat mixture, and stir until melted.

    Line a shallow pan with plastic wrap, spread the mixture about 2 cm thick, and chill until firm.

    Remove from the pan, lift the wrap, cut out roughly 2 cm circles. Clean and warm the pan each time to ease cutting.

    Chop the couverture, melt it, and temper it. Dip the pralines in the liquid couverture with a pralin fork, place on a sheet of foil to dry, and let set.
