Ingredients
- 200 ml light coconut milk
- 300 ml milk
- 40 g starch
- 0.25 tsp ground cardamom
- 40 g shredded coconut
- 2 drops liquid stevia (organic, optional)
- 100 ml low-fat whipped cream (19% fat)
- 1 tsp cocoa powder
- 20 ml coconut liqueur
- 25 g chocolate
Instructions

Add the coconut milk and milk to a pot, reserve 4-5 tbsp, whisk in the starch until smooth. Bring the milk with cardamom to a boil, then remove from heat and stir in the starch.

Bring to a boil again and fold in the shredded coconut, stevia, and cocoa. Whip the cream stiffly and when the pudding is warm enough, fold in the liqueur.

Divide into four dessert glasses and chill in the refrigerator. Serve with finely grated chocolate.
