Chocolate Parfait with Cherries

Ingredients

  • 250 g sour cherries (jarred)
  • 200 g dark chocolate
  • 1 egg
  • 2 egg whites
  • 60 g powdered sugar
  • 200 ml whipping cream
  • oil (for the mold)
  • 40 g pistachios

Instructions

    Drain the cherries. Roughly chop the chocolate with a knife and melt it over a hot water bath.

    Separate the egg, placing the whites in a large bowl to chill. Beat the yolk in a mixing bowl, add powdered sugar, and whisk over a hot water bath until thick and frothy. Fold in the melted chocolate, then beat quickly in ice water to cool.

    Whip the cream stiffly and fold it into the chilled mixture. Whisk the egg whites to stiff peaks and fold them along with the cherries into the mousse.

    Oil a terrine mold lightly, line it with cling film, pour in the mixture, and smooth the top. Cover with film and freeze for at least 6 hours until solid.

    Remove the ice cream about 10 minutes before serving. Unwrap the partially frozen portion, transfer to a plate, and peel off the remaining film. Sprinkle chopped pistachios over the surface.

    Slice into rounds using a knife briefly dipped in hot water, and serve with optional Amaretto cherries and sweet wine if desired.
