Chocolate Ice Cream

Ingredients

  • 250 ml milk
  • 200 g dark couverture chocolate
  • 60 g sugar
  • 3 egg yolks
  • 1 sheet of white gelatin
  • 300 g whipping cream
  • 2 tbsp sugar
  • 300 g whipping cream
  • 75 g dark couverture chocolate
  • 40 ml orange liqueur
  • 125 ml orange juice
  • 2 kumquats
  • candied orange peel strips
  • grated chocolate

Instructions

    Soak the gelatin in cold water.

    Bring the milk to a boil.

  3. 3.

    Break the couverture into pieces and place them in a bowl. Pour the boiling milk over it, let the chocolate melt. Then add the squeezed gelatin and mix well; allow to cool.

    Whisk the egg yolks and sugar until pale and frothy, then add to the chocolate milk and cool.

    Beat the cream stiffly and fold it into the cold chocolate mixture. Fill the chocolate mixture into portion molds and place in the freezer for 3–4 hours.

    For the sauce melt sugar with 2 tsp water in a pan, let it caramelize to a light caramel, then deglaze with orange juice and liqueur and reduce to one‑third of the original liquid volume. Boil couverture and cream together, stir in the orange reduction, then cool.

    To serve pour the frozen chocolate pudding onto dessert plates (briefly dip the molds in hot water beforehand), drizzle with sauce, and garnish with halved kumquats, candied orange peel strips, and grated chocolate.
