Ingredients
- 2 Eggs
- 300 ml milk (3.5% fat)
- 150 g spelt whole‑grain flour
- 2 tbsp cocoa powder
- 2 tbsp honey
- 400 g Strawberries
- 200 g low‑fat quark
- 1 tsp Linseed oil
- 0.25 tsp vanilla powder
- 1 tbsp butter
Instructions

Whisk eggs with milk, flour, cocoa and 1 tbsp honey into a smooth batter; let rest for about 20 minutes.

Wash, core, and slice the strawberries. Mix the quark with remaining honey, linseed oil, and vanilla powder until creamy.

Heat a little butter in a pan and pour a portion of batter to form pancakes. Flip after 1–2 minutes when golden brown, cook another 1–2 minutes. Repeat until all batter is used.

Spread about one quarter of the vanilla quark on each pancake, top with strawberries, fold into quarters, and arrange on plates.
