Ingredients

  • 3 tbsp Flour
  • 200 g ground almonds
  • 2 tsp cocoa powder
  • 4 egg whites
  • 250 g very fine sugar
  • 150 g dark chocolate
  • 80 ml whipping cream
  • 20 g butter

Instructions

    Preheat the oven to 120°C fan.

    Mix the flour with the almonds and cocoa in a bowl. Beat the egg whites into stiff peaks. Gradually fold in the sugar until a firm, glossy batter forms. Gently fold in the almond‑flour mixture. Transfer the batter to a freezer bag or piping bag with a large round tip.

    Pipe small half‑balls about 2 cm in diameter onto a parchment‑lined tray. Bake in the preheated oven for about 45 minutes, leaving the door slightly ajar. Remove from the oven and cool.

    For the filling, chop the couverture chocolate into small pieces and melt gently over a bain‑marie. Whip the cream to stiff peaks. Stir the butter into the melted chocolate with a whisk. Once the chocolate has cooled, fold in the whipped cream. Spread the filling on half of the macarons and sandwich with the remaining ones.
