Oatmeal Bars with Peanuts and Chocolate
Crunchy oatmeal bars studded with peanuts and coated in rich chocolate. A sweet snack for any time of day. A recipe from Spoonsparrow.
Ingredients
- 200 g peeled peanut kernels
- 150 g soft rolled oats
- 125 g sugar
- 150 g peanut butter
- 75 ml milk
- 75 g butter
- 3 eggs
- 100 g spelt flour
- 1 tsp Baking powder
- 250 g dark chocolate
- 175 ml whipping cream
- pretzel (for garnish)

Preheat the oven to 180 °C (350 °F) with both top and bottom heat.

Coarsely chop half of the peanuts and mix them with the oats, spelt flakes, and sugar in a mixing bowl. Warm the peanut butter with milk and butter until lukewarm, then add it to the bowl along with the eggs and beat vigorously using hand‑mixing attachments. Sift the flour with baking powder into the mixture and fold in; add the remaining peanuts and fold again.

Spread the dough evenly onto a sheet of parchment paper on a baking tray to about 1.5 cm thickness and bake for 25–30 minutes until golden brown. Remove from oven and cool on a wire rack.

Chop the chocolate finely. Bring the cream to a boil, pour over the chocolate, let sit for one minute, then stir with a spatula until a smooth ganache forms. Spread the ganache over the cooled dough, cut into square portions (use a small knife), and top each piece with a pretzel garnish. Let the ganache set in a cool room for about an hour, then slice the cake into pieces and serve.
