Ingredients

  • Butter (for the baking tin)
  • Flour (for the baking tin)
  • 150 g red grapes
  • 200 g nougat
  • 200 g soft butter
  • 200 g sugar
  • 1 Tbsp vanilla sugar
  • a pinch of salt
  • 4 eggs
  • 250 g flour
  • 2 tsp Baking powder
  • 100 g cornstarch
  • 30 g cocoa powder
  • 150 ml milk
  • 50 g Raisins
  • 100 g dark couverture chocolate

Instructions

    Preheat the oven to 180°C with top and bottom heat (or 160°C fan). Grease the Gugelhupf tin with butter and dust with flour.

    Wash, pat dry, and halve the grapes. Melt the nougat over a double boiler. Cream the butter and sift in the sugar. Add vanilla sugar, salt, and gradually whisk in the eggs. Sift the flour with baking powder, cornstarch, and cocoa, then alternately fold into the egg‑butter mixture with milk. Fold in the nougat mixture, grapes, and raisins. Pour the batter into the tin and smooth the top.

    Bake in the preheated oven for about 1 hour (test with a skewer).

    Remove from the oven, let cool, and then unmold onto a plate to finish cooling completely.

    Melt the couverture chocolate over a double boiler and drizzle ribbons over the cake. Let the glaze set and serve the cake with grapes if desired.
