Chocolate Banana Oatmeal Muffins from Spoonsparrow: Ripe bananas not only provide great aroma, they also make the mini muffins especially moist!
Ingredients
- 2 ripe bananas
- 200 g Flour
- 100 g oat flakes
- 0.5 tsp cinnamon
- 2 tsp Baking powder
- 0.5 tsp Baking soda
- 1 egg
- 120 g sugar
- 80 ml vegetable oil
- 150 g buttermilk
- 75 g chocolate chips
Instructions

Peel the bananas and mash them finely with a fork. Mix flour, oat flakes, cinnamon, baking powder and baking soda together.

In a large bowl whisk the egg. Add sugar, vegetable oil, mashed bananas and buttermilk; stir well. Fold in the dry mixture until just combined, then fold in chocolate chips.
