- 3 egg whites
- 250 g sugar
- a pinch of salt
- 300 g hazelnuts
- 1 tbsp cocoa powder
- cranberry jam (for assembly)
- chocolate
- red sugar glaze (from tube)

Beat the egg whites into stiff peaks, gradually add the sugar and continue beating until a pale creamy batter forms. Gently fold in the salt, hazelnuts, and cocoa powder. Spoon the mixture through a piping bag fitted with a round tip onto parchment‑lined baking sheets as small mounds. Bake at 160 °C for about 30 minutes, then leave the oven slightly ajar to dry further before removing and cooling completely.

Assemble each pair of cookies by spreading warm cranberry jam between two pieces and decorate with chocolate and red sugar glaze.
