Ingredients
- 800 ml coconut milk
- 1 untreated lime
- 1 cinnamon stick
- 200 g milk rice
- 50 g rice syrup
- 200 ml soy cream
- 1 packet whipping stabilizer
- 150 g blueberries

Heat the coconut milk in a pot. Wash the lime hot and thinly slice its peel. Add the cinnamon and lime zest to the coconut milk and bring to a boil. Stir in the rice, reduce heat, and simmer gently for about 30 minutes, stirring occasionally.

Remove from heat and stir in the rice syrup. Let cool with the lid open for about 15 minutes. Whip the soy cream with the stabilizer until stiff and fold into the rice. Rinse the blueberries and pat dry. Fold them in as well and serve portioned into bowls.
