Ingredients
- 700 ml light red wine
- 50 ml port wine
- 0.5 untreated orange (zest)
- 2 cloves of mace
- 1 cinnamon stick
- 0.5 tsp cardamom pods
- 2 star anise
- 1 cm fresh ginger (sliced)
- 8 tbsp brown sugar (more or less to taste)
- 4 pears (e.g., Williams Christ)
Instructions

Heat the red wine together with the port wine, orange zest, spices, ginger and sugar in a pot until just before boiling. Do not boil; let it steep for 10-15 minutes.

Peel the pears and cut out the core from the bottom with a sharp knife. Place the pears in the liquid so they are well covered and simmer for 2-3 minutes. Then allow them to cool in the liquid. Serve arranged with the liquid.
