Ingredients

  • 100 g dark chocolate
  • 200 g coconut palm sugar
  • 1 pinch cinnamon
  • 1 pinch ground clove
  • 250 g ground almonds
  • 2 tsp cocoa powder
  • 2 egg whites
  • 1 pinch salt
  • 1 tbsp orange juice

Instructions

    Melt chocolate in a double boiler. Mix coconut palm sugar, spices, almonds and cocoa. Whisk egg whites with salt until stiff peaks form. Fold the mixture into the almond batter gradually. Stir in melted chocolate and orange juice, then work into a firm dough. Shape into balls and chill for about 1 hour.

    Roll out the dough on a floured surface to 1 cm thickness and cut out pine tree shapes. Place on parchment‑lined baking sheets and bake in a preheated oven at 200 °C (180 °C fan; gas level 3) for 7–10 minutes.
