Chinese-Style Soup with Stuffed Dumplings

- 250 g wheat starch
- boiling water
- 150 g chopped shrimp
- 0.5 tsp freshly grated ginger
- 1 tsp Sesame oil
- Salt
- a pinch of sugar
- 800 ml vegetable broth
- 1 mini Pak Choi
- 1 mild green pepperoni
- 2 tbsp Chinese chives rolls
- rice vinegar
- Salt

Make a smooth, silky dough from wheat starch and water (add in small amounts while kneading). Roll thinly, cut out circles about 8–10 cm wide. Mix shrimp, ginger, sesame oil, sugar and salt well. Place the filling in the center of each circle. Fold the dough over, alternating the seam side into folds to create a zig‑zag stitch.

Bring the broth to a boil. Wash, trim and roughly chop the Pak Choi; wash, trim and finely dice the pepperoni. Add them with chives and Pak Choi to the soup. Stop boiling and let it simmer. Drop in the dumplings and cook for about 8 minutes until done. Season with rice vinegar and salt before serving.
