Ingredients

  • 1 l fish stock (glass or homemade)
  • 1 piece ginger (30 g)
  • 4 small kaffir lime leaves
  • 1 red chili pepper
  • Salt
  • 1 small leek stalk
  • 100 g small pak choi leaves
  • 1 lemongrass stalk
  • 20 ml sherry
  • 250 g shrimp (prepped, shell removed)
  • 2 tbsp Lime juice
  • 2 Garlic cloves

Instructions

    Peel the ginger and slice into rounds. Peel the garlic and halve it. Wash the chili peppers and slit one side open. Wash, trim, and cut the leek into diagonal strips. Clean the pak choi and, if needed, divide into bite-sized pieces. Trim the lemongrass and lightly tap it to loosen the flavor. Pour the fish stock into a pot, add ginger, garlic, lemongrass, kaffir lime leaves, and chili; let simmer for 5 minutes.

    Remove the chilies, ginger, garlic, and lemongrass pieces. Season the broth with salt, sherry, and lime juice. Bring to a boil, then add pak choi and leek and let gently simmer for 2-3 minutes. Add the shrimp and simmer for another 1-2 minutes. Serve in bowls.
