Ingredients

  • 250 g Chinese cabbage
  • 2 stalks celery
  • 1 tart apple
  • juice of 1 lemon
  • 2 oranges
  • Salt
  • pepper (ground)
  • 2 tbsp sunflower oil
  • 75 g crème fraîche
  • 2 slices whole‑grain toast
  • 1 tbsp butter
  • parsley

Instructions

    Wash, trim and cut the Chinese cabbage into strips perpendicular to the stems.

    Wash, trim and cut the celery diagonally into pieces about 10 cm long.

    Wash the apple, quarter it, remove the core and slice into wedges. Drizzle the apple wedges with a little lemon juice.

    Peel the oranges with a sharp knife like an apple, remove all white membranes and cut along the segments to separate the flesh. Squeeze out any remaining pulp and collect the juice.

    Whisk together orange juice, remaining lemon juice, salt, pepper, sunflower oil, and crème fraîche to make a dressing; season to taste.

    Dice the toast slices and brown them in hot butter in a skillet until golden on all sides.

    Arrange the salad ingredients on bowls as desired, drizzle with dressing, and sprinkle with parsley and croutons.
