Chili Marinade

Ingredients

  • 1 bunch spring onions
  • 1 Garlic clove
  • 3 red chili peppers
  • 6 tbsp Olive oil
  • 2 tbsp green, pitted olives
  • 100 ml red wine vinegar
  • 100 ml Vegetable broth
  • 1 bay leaf
  • Salt

Instructions

    Wash, trim, and dry the spring onions; cut the green parts into leafy pieces while leaving the white bulbs whole. Peel and crush the garlic.

    Wash the chilies and slice them into rings. Heat the oil in a saucepan and sauté the spring onions with the garlic, chilies, and olives.

    Add the broth and vinegar, remove from heat, add the bay leaf, season with salt, and let cool. Transfer to small bowls for use as a vegetable dip.
