Ingredients

  • 30 g walnut kernels
  • 2 chicories
  • red bell pepper
  • green bell pepper
  • yellow bell pepper
  • 1 small apple
  • juice and grated zest of 1 organic orange
  • 1 tbsp light balsamic vinegar
  • Salt
  • Pepper
  • 2 tbsp nut oil

Instructions

    Coarsely chop walnuts and briefly toast them in a small pan without added fat. Separate chicory leaves from the stems, cut large leaves into smaller pieces. Clean bell peppers, rinse, and slice into fine strips.

    Wash the apple, quarter it, remove seeds, and dice. Mix orange juice with zest, vinegar, salt, pepper, and nut oil. Add apple cubes. Arrange chicory and bell pepper on a plate. Drizzle the dressing over the salad and sprinkle with toasted walnuts before serving.
