Chicory Citrus Salad

Try the delicious chicory citrus salad from Spoonsparrow or one of our other healthy dishes!

Ingredients

  • 4 chicory heads
  • 6 mandarins
  • 2 Apples
  • 1 lemon
  • 100 g chopped hazelnuts
  • 3 tbsp honey
  • 4 Tbsp sunflower oil
  • salt to taste
  • 2 sprigs curly parsley (for garnish)

Instructions

    Wash the chicory and separate the leaves.

    Peel 5 mandarins and remove the segments. Arrange the chicory leaves in a fan shape on four plates with the mandarin segments.

    Peel the apples, remove cores, and dice the flesh into small cubes. Sprinkle apple cubes over the chicory leaves and mandarin segments.

  4. 4.

    For the dressing squeeze juice from the last mandarin and half a lemon. Mix mandarin and lemon juice, nuts, honey, and oil; season with salt and pour over the salad. Wash parsley, pat dry, tear off leaflets, and scatter over the salad.
