- 4 Chicorée
- 4 EL Olive oil
- Salt
- Pepper
- 0.5 bunch Basil
- 75 g arugula (1 bunch)
- 50 g sheep cheese (cubed)
- 30 g pine nuts
- 1 Garlic clove
- 7 EL olive oil
- Salt
- freshly ground pepper
Instructions

Wash the chicory, optionally remove outer leaves, cut off the stem and halve. Sauté chicory halves in olive oil and season with salt and pepper.

Wash basil and arugula and shake dry. Set aside half of the arugula. Finely chop remaining arugula and basil.

Peel garlic and roughly chop

Stir sheep cheese, pine nuts, garlic and oil together and season with salt and pepper. Arrange chicory halves on preheated plates and garnish with salsa verde.
