Tomato Salad with Parsley

Ingredients

  • 800 g tomatoes
  • 1 Red Onion
  • 3 tbsp chopped parsley
  • 2 tbsp white wine vinegar
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Blanch tomatoes for a few seconds, shock in cold water, peel, quarter and seed. Peel the onion and finely chop.

    Whisk vinegar with oil, salt and pepper, then combine with tomatoes, onions and parsley. Serve on plates.
