Marinated Herring on Bean Salad

Ingredients

  • 12 herring fillets (with skin)
  • 2 large onions
  • 1 Carrot
  • 1 tbsp piment
  • 2 tsp peppercorns
  • 1 star anise
  • 1 tsp fennel seeds
  • 3 bay leaves
  • 250 ml vinegar
  • 200 ml water
  • 5 tbsp sugar
  • 1 handful frisée lettuce
  • 1 handful Arugula
  • 500 g cooked pint beans (or borlotti beans)
  • 60 ml White wine vinegar
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • lemon juice (to taste)

Instructions

    Bring the sauce to a boil and let it cool. Place the fish with the spices and sliced vegetables in a large jar. Pour the cold sauce over it and seal the jar. Keep refrigerated for at least 3 days.

    Wash, dry, and tear the frisée lettuce and arugula into small pieces. Toss the beans together and season with vinegar, oil, salt, pepper, and lemon juice. Arrange on four plates and remove the herring fillets from the brine, let them drain slightly, then place over the salad.
