Chickpea Fritters with Goji Berries

The delicious chickpea fritters with goji berries from Spoonsparrow taste not only to vegetarians!

Ingredients

  • 2 Spring Onions
  • 1 Garlic clove
  • 60 g goji berries (4 tbsp)
  • 500 g chickpeas (cooked)
  • 20 g Parsley (1 bunch)
  • 250 g quark (20% fat in the tub)
  • 30 g chickpea flour (2 tbsp)
  • 0.25 tsp ground cumin
  • Salt
  • Cayenne pepper
  • 2 tbsp olive oil
  • 1 bundle radishes
  • 100 g wild herb salad
  • 30 g tahini (2 tbsp; sesame paste)
  • 2 tbsp lemon juice
  • 4 tbsp linseed oil

Instructions

    Meanwhile clean, wash and slice the radishes. Wash and dry the salad. Mix the remaining quark with tahini and lemon juice, season with salt and pepper. Arrange the salad on plates, place the fritters on top, add radish slices, a dollop of quark and drizzle 1 tbsp linseed oil over each.
