Stuffed Zucchini with Tuna

Stuffed zucchini with tuna from Spoonsparrow are a great summer dinner – light, tasty and full of healthy nutrients.

Ingredients

  • 4 zucchini
  • 2 tbsp olive oil
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp tomato puree
  • 150 g chopped tomatoes (canned)
  • 50 g star-shaped pasta noodles
  • 150 g tuna (canned)
  • 20 g butter
  • 50 g breadcrumbs
  • Salt
  • Pepper

Instructions

    Wash the zucchini, trim ends, halve lengthwise and scoop out seeds with a spoon. Peel and finely chop onion and garlic; sauté in oil. Add tomato puree, canned tomatoes, pasta noodles and simmer for about 10 minutes, let cool slightly, then fold in shredded tuna.

    Grease a baking sheet, place zucchini halves on it, fill them. Heat butter, briefly toast breadcrumbs in it, sprinkle over the zucchini halves and bake at 180°C for 25 minutes. Serve stuffed zucchini with tuna.
