Ingredients
- 500 g Potatoes
- 500 g zucchini
- 2 tbsp finely chopped parsley
- 1 egg
- 50 g flour
- Salt
- Pepper (freshly ground)
- butter (for frying)
Instructions

Peel and wash the potatoes. Wash the zucchini and trim the ends. Grate the potatoes finely and the zucchini coarsely, then mix in a bowl with the egg and flour; season with salt and pepper and fold in the parsley.

Heat butter in a pan. Drop about 2 tbsp of batter per patty into the pan. Cook on medium heat for about 4 minutes on each side until crisp brown. Serve immediately hot with a salad.
