Savory Onion Strudel

Ingredients
- 250 g flour
- 1 pinch salt
- 7 tbsp sunflower oil
- 6 medium to large onions
- 1 Garlic clove
- 2 tsp caraway seeds
- Salt
- freshly ground pepper
- sugar
- 1 tsp curry powder
- 1 tsp paprika powder
- 1 egg yolk
- 2 tbsp chives (for serving)
- 200 g sour cream (for serving)

Warm 1/8 liter of water to lukewarm. In a bowl combine the flour, water, salt and 2 tbsp sunflower oil; knead into a smooth dough. Punch the dough hard on the work surface until it is smooth and shiny. Cover with a warmed bowl and let rest for about 30 minutes. Peel the onions, halve them and cut into strips.

Peel and finely chop the garlic clove. Heat 3 tbsp sunflower oil in a pan; sauté the onion strips, garlic, caraway seeds, herbs, salt, pepper, sugar, curry and paprika powder for 5-8 minutes. Roll out the dough on a floured work surface to a size of 40 x 25 cm. Dust a kitchen towel with flour, lay the rolled dough on it and stretch it to 80 x 50 cm.

Preheat the oven to 225°C (Oven + fan). Spread the cooled onion mixture over the dough and roll up from the narrow side using the floured towel. Seal the ends and place the strudel seam-side down on a baking sheet lined with parchment paper. Whisk the egg yolk with the remaining oil and brush it over the strudel. Bake in the preheated oven for about 40-45 minutes. Serve hot with sour cream and chives.
