Ingredients
- 2 chicken breast fillets
- 100 ml White wine
- 100 ml Vegetable broth
- 250 g celeriac
- 2 sour apples
- juice of one lemon
- 100 g heavy cream
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 100 g salad leaves (e.g., oak leaf or head lettuce)
Instructions

Bring the white wine and vegetable broth to a boil, then reduce heat and let it simmer; add the chicken breasts and poach for 15 minutes. Remove them, drain on kitchen paper, and allow to cool before slicing into strips.

Wash the apples, quarter them, remove the core, and grate coarsely. Peel the celeriac, grate it as well, and drizzle both with lemon juice.

Whisk the cream until half‑set and mix with apple and celeriac. Season with salt, pepper, and sugar. Arrange the Waldorf salad on the lettuce leaves with the chicken strips.

Sprinkle lightly with freshly ground pepper before serving.
