Spinach Salad with Oranges

Ingredients

  • 1 small head of lettuce
  • 100 g spinach leaves
  • 1 Spring onion
  • 1 lemon (juiced)
  • 5 Oranges
  • 300 g herb cream cheese
  • 4 Tbsp sunflower oil
  • Salt
  • Pepper

Instructions

    Wash, clean, rinse the salad, dry and cut into bite-sized pieces. Wash the spinach leaves and shake them dry. Wash the spring onion and slice it lengthwise into thin strips, briefly blanch in boiling water. Wash an orange, juice it. Peel the remaining oranges with a sharp knife, removing the white pith. Slice the oranges into rounds.

    Distribute 2/3 of the orange slices on a large leaf, place the lettuce leaves over them, and arrange the spinach leaves on top. Sprinkle the cream cheese in small heaps onto the spinach leaves with a tablespoon. Mix lemon juice, orange juice and oil, season with salt and pepper, then drizzle over the salad. Garnish with the remaining orange slices and spring onions before serving.
