Chicken Thighs in Tomato Sauce

Ingredients

  • 4 chicken thighs
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • Tomato sauce
  • 500 g tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 1 tbsp thyme leaves (chopped)
  • 2 tbsp oil
  • Salt
  • Pepper (freshly ground)
  • 400 g green fettuccine
  • thyme sprig (for garnish)

Instructions

    For the tomato sauce, steep the tomatoes in hot water, peel and core them, then dice the flesh. Peel and finely dice the onion and garlic. Heat oil in a pot, add the onion and sauté until translucent, then add the garlic and tomato cubes. Let simmer briefly, add thyme leaves, season with salt and pepper, and taste.

    Wash the chicken thighs, split at the joint if desired, pat dry, rub with salt and pepper, and brown them all over in oil by turning frequently.

    Transfer to a greased oven-safe baking dish, pour the tomato sauce over, cover with foil, and bake in a preheated oven at 180°C for about 25 minutes.

    Meanwhile, cook the fettuccine in boiling water until al dente.

    Plate the pasta, top with the chicken thighs and tomato sauce, garnish with thyme sprigs, and serve.
