Ingredients

  • 2 slices cheese (e.g., Emmental, Gouda)
  • 4 slices bacon
  • 300 g green asparagus
  • 2 carrots
  • 1 handful spinach leaves
  • 1 tomato
  • 1 onion
  • 0.333 cucumber
  • juice of one lemon
  • 2 tbsp white wine vinegar
  • 4 tbsp oil
  • Salt
  • pepper from grinder

Instructions

    Wash and pat dry chicken breasts, cut a pocket on the side. Stuff with cheese and wrap each with two slices of bacon. Season with pepper and cook in 2 tbsp hot oil for about 6-8 minutes, turning occasionally until golden brown.

    Peel the lower third of the asparagus, halve it, and blanch in boiling salted water for about 4 minutes. Peel carrots and blanch similarly for about 4 minutes.

    Wash tomato, quarter it, remove stem and seeds, then dice. Peel onion and finely dice. Peel cucumber, cut lengthwise, deseed and finely dice. Combine tomatoes, onions, and cucumber.
