Ingredients

  • 160 g Röstitaler (4 pieces; frozen; ready-made)
  • 2 shallots
  • 3 sprigs thyme
  • 150 g very small cherry tomatoes
  • 250 g chicken breast fillet (2 fillets)
  • 1 tbsp Rapeseed Oil
  • 100 ml poultry broth
  • 50 ml cooking cream
  • Salt
  • Pepper

Instructions

  1. 1.

Bake the Röstitaler according to package instructions without added fat in a preheated oven on a baking sheet until crispy on both sides.

  2. 2.

Meanwhile, peel and finely dice the shallots.

  3. 3.

Wash the thyme, shake off excess water, and strip the leaves. Wash the tomatoes and drain them in a sieve.

  4. 4.

Rinse the chicken fillets and pat dry with kitchen paper. Using a large knife, first cut lengthwise into strips, then cut the strips into short pieces.

  5. 5.

Heat rapeseed oil in a large non-stick pan. Brown the chicken strips over medium heat, turning frequently, until golden brown all around.

  6. 6.

Add the shallots and about two-thirds of the thyme leaves, cooking for 2-3 minutes while stirring often. Pour in the broth and cream, then stir.

  7. 7.

Season with salt and pepper, add the whole tomatoes, and cook for another 3-4 minutes, stirring occasionally. Plate the chicken strips with the Röstitaler, sprinkle with remaining thyme, and serve.
