Ingredients

  • 1 Shallot
  • 2 tbsp plant oil
  • 100 g chunky peanut butter
  • 100 ml coconut milk
  • 100 ml poultry broth
  • Cayenne pepper
  • soy sauce
  • 500 g chicken breast fillet
  • 0.5 Red chili pepper
  • 1 Garlic clove
  • 1 tsp sweet paprika
  • 1 tsp herb salt
  • pepper (ground)
  • 4 tbsp olive oil
  • 0.5 Mango
  • 0.25 Cucumber
  • 1 red bell pepper
  • cilantro (for garnish)

Instructions

  1. 1.

Peel and finely chop the shallot. Sauté in hot oil until translucent, then add peanut butter and lightly toast while stirring. Deglaze with coconut milk and stir in a bit of poultry broth. Simmer gently for about 5 minutes, adding more broth if needed, and season with cayenne pepper and soy sauce. Let cool in small bowls.

  2. 2.

Wash and pat dry the chicken. Deseed and dice the chili. Peel the garlic and press it into the mixture. Add paprika, herb salt, pepper, and oil; mix well. Rub this seasoning onto the chicken. In a hot pan, cook for about 3 minutes per side. Let rest slightly and cut into cubes.

  3. 3.

Peel the mango and cube the flesh. Wash the cucumber, halve lengthwise, and slice. Wash the bell pepper, deseed, and cut into large cubes. Alternate threading mango, vegetables, and chicken onto skewers. Serve the Chicken Skewers with Mango with the dip and a sprinkle of cilantro.
