Celeriac Salad with Pineapple

The celeriac salad with pineapple from Spoonsparrow scores with an extraordinary combination, great taste and plenty of nutrients!

Ingredients

  • 40 g yellow raisins
  • 30 ml apple juice
  • 300 g celery root
  • 2 tbsp lemon juice
  • 60 g yogurt
  • 2 pineapples
  • 60 g walnut kernels
  • 2 tbsp walnut oil
  • 2 tbsp Apple cider vinegar
  • Salt
  • 2 tbsp chopped parsley

Instructions

    Drizzle the raisins with apple juice. Peel, trim and grate the celery root finely. Mix with lemon juice and yogurt. Peel the pineapple, remove the core and cut the fruit into large cubes. Roughly chop the walnuts.

    Combine the pineapple, walnuts, raisins and celery with the yogurt in a bowl. Season the celeriac salad with walnut oil and a pinch of salt. Distribute onto bowls and sprinkle parsley on top.
