Chicken Skewers with Cucumber Salad

Ingredients
- 1 cucumber
- 1 white onion
- 1 untreated lemon
- 7 tbsp olive oil
- Sea salt
- black pepper (freshly ground)
- 2 handfuls coriander leaves
- 1 Garlic clove
- 600 g Chicken breast fillet

Wash the cucumber, trim the ends and slice into thin rounds or half-moons. Peel the onion and cut it into thin rings as well. Wash the lemon under hot water, dry it, zest the peel and squeeze half of it for juice. Arrange cucumber slices with onion rings and zest on plates. Drizzle with a little lemon juice and 2 tbsp oil. Season with salt and pepper and let sit.

Meanwhile, for the pesto wash the coriander leaves, shake dry and blend with the peeled garlic clove and 4-5 tbsp olive oil until smooth. Season with lemon juice, salt and pepper.

Wash the chicken, pat dry and cut into cubes. Thread onto wooden skewers, brush with oil and season with salt and pepper. Cook in a hot grill pan (or on the grill) for about 5 minutes per side until cooked through. Slice the remaining lemon half and add to the pan.

Serve the skewers with the pesto and cucumber salad.
