Chicken Salad Buns

Pineapple, mushroom, and sprout chicken salad buns: This spicy snack contains plenty of valuable protein but very little fat.

Ingredients

  • 100 g fresh pineapple (1 slice)
  • 1 small red onion
  • 6 mushrooms
  • 100 g smoked chicken breast fillet (cold cut)
  • 2 stalks tarragon
  • 150 g yogurt
  • Salt
  • Pepper
  • 1 whole‑grain baguette bun
  • 50 g alfalfa sprouts

Instructions

    Peel and dice the pineapple and onion. Place in a sieve and blanch for 30 seconds in boiling water. Remove and drain.

    Clean the mushrooms and slice thinly. Dice the chicken. Wash, dry, and finely chop the tarragon.

    Combine everything with the pineapple and onion cubes in a bowl. Mix well with the yogurt. Season with salt and pepper. Cut the bun crosswise into halves.

    Wash, dry, and top the lower half of the bun with alfalfa sprouts. Spoon the salad on top, then place the other half as a lid.
