Chicken Salad with Walnuts

A chicken salad with walnuts tastes wonderfully again and again – try this recipe from Spoonsparrow!

Ingredients

  • 600 g cooked turkey meat
  • 2 pears
  • 150 g walnuts
  • 6 tbsp yogurt
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • Salt
  • Cayenne pepper
  • 6 lettuce leaves
  • 3 small carrots

Instructions

    Cut the turkey into bite-sized pieces. Peel, quarter, core, and slice the pears into strips. Roughly chop 2/3 of the walnut kernels. Whisk together yogurt, lemon juice, honey, a pinch of salt, and cayenne pepper; add the turkey and mix well. Cover and let marinate for at least one hour, then taste again. Wash, dry, and tear the lettuce leaves into bite-sized pieces.

    Peel, trim, and halve the carrots lengthwise; distribute them with the lettuce in six glasses. Spoon the walnut chicken salad over the greens and sprinkle with the remaining walnuts before serving.
