Chicken Salad with Mandarins

Ingredients

  • 1 fully cooked roast chicken
  • Iceberg lettuce
  • 1 red bell pepper
  • 1 bunch of spring onions
  • 1 can of mandarins
  • 40 g unsalted peanuts
  • 200 g yogurt salad cream
  • 1 tbsp milk
  • 3 tsp Curry powder
  • Lemon juice
  • Salt
  • Pepper
  • a pinch of sugar

Instructions

    Remove skin and bones from the chicken and cut the meat into bite‑sized pieces.

    Chop the iceberg lettuce, wash it thoroughly, and let it drain. Quarter the bell pepper, clean and rinse it, then chop finely. Trim the spring onions, wash them, and slice diagonally into thin rings. Drain the mandarins, reserving the juice. Roast the peanuts in a dry pan until fragrant.

    Whisk the yogurt dressing with milk, a splash of mandarin juice, and curry powder. Season with lemon juice, salt, pepper, and a pinch of sugar.

    Lay a bed of iceberg lettuce in a bowl. Combine the remaining prepared ingredients with the dressing and pour over the lettuce.
